Tsubame City, Niigata Prefecture, Japan has long been a region where metalworking is handed down for generations. It was started with nails in the Edo period, then transitioned to manufacturing various metal products such as files and chimneys. Around the 1900s, Tsubame City became the largest producer of spoons and forks in Japan. Ever since then, the Tsubame region has accounted for 90% of the share of western tableware in Japan. Passed down from generation to generation, artisans have shared their reliable techniques. With high-end techniques, knife artisans have sharpened knives one by one and have meticulously designed them.  Japanese knife types 

Gyutoku knife
This knife is designed for cutting meats, vegetables, and fish.  The Gyutoku is a multipurpose kitchen knife originally from Europe. You can cut meats and chop vegetables, or even cut fish fillets into sashimi(thin fish slices). The knife has a blade length of 18 cm to 22 cm (about 7 to 8.5 inches) and is the most suitable for home cooking.
Santoku knife
The Santoku knife is mainly used at home. It is designed for cutting various ingredients such as meats, fish, and vegetables. It’s an easy to use, multipurpose kitchen knife. The Chef’s knife, the general-utility knife for most western cooks, has changed its shape and use with the times and has become the Japanese Santoku knife. This knife is the most popular kitchen knife and its popularity spread dramatically among Japanese people after World War Ⅱ. Most Japanese people have experience using the Santoku knife as their standard model for home cooking.
Nakiri knife
Nakiri means chopping vegetables in Japanese, so this knife is specifically designed for cutting vegetables. The blade of the knife is wider than others so that you can effortlessly cut through thick vegetables like cabbage. The blade length is generally 15 cm to 17 cm (about 6 to 6.5 inches). It’s the most suitable kitchen knife for cutting, chopping and shredding vegetables, not for cutting meats or fish. 
Sashimi knife
This is a Western Japan-style Sashimi knife. Since its blade shape resembles an iris leaf, it is called Shobu, meaning iris in Japanese. It has a sharp point and is easy to use. It is mainly used for cutting fish fillets. Sashimi knives have one of the longest blades among the Japanese knives. It is 21 to 24 cm (about 8 to 9.5 inches) in length so that you can easily cut ingredients while pulling the knife. This knife is used by professional Japanese sushi chefs to cut fish fillets into sashimi. Some chefs also use Sashimi knives to cut meats into thin slices. After you cut fatty meats, please keep in mind that you must keep the knife clean so that there will be no oil stains on it.
